Η καυκαλήθρα (επιστ. ονόμ: Tordylium apulum – Τορδύλιον το Άπουλον) είναι ετήσιο ποώδες φυτό.

Η καυκαλίδα είναι άγριο χόρτο εξαιρετικής ποιότητας, με ευχάριστο άρωμα. Χρησιμοποιείται περισσότερο στην παρασκευή χορτοπιτών και ως μυρωδικό αλλά τρώγεται και μόνο του ή βρασμένο μαζί με άλλα άγρια χόρτα όπως σκατζίκια, αλευρίδες, ζοχούς κ.ά.

Τελευταία, άρχισε να χρησιμοποιείται και στη γαστρονομία και για το λόγο αυτό, μπορεί κανείς να το βρει να πωλείται σε ματσάκια, στις λαϊκές αγορές ή μανάβικα.

Οι μεσογειακές καυκαλήθρες έχουν βρώσιμα φύλλα. Στην Ιταλία χρησιμοποιούνται ως καρύκευμα. Σε ανάλυση της σύνθεσης του αιθέριου ελαίου των υπέργειων μερών καυκαλήθρας από την Ιταλία ταυτοποιήθηκαν εξήντα επτά ενώσεις που αντιπροσώπευαν το 96,5% του ελαίου. Οι πιο άφθονες ενώσεις ήταν (Ε)-β-οκιμένιο (ocimene) (17,3), α-humulene (11,4%) και οκτύλιο οκτανοϊκό (octyl octanoate) (8,8%). Αιθέριο έλαιο από υπέργεια μέρη του Τ. του Άπουλου από την Ελλάδα έχει αναφερθεί ότι περιέχει α-humulene (28,7%) και οκτύλιο εξανοϊκό (octyl hexanoate) (11,7%) ως κύρια συστατικά.

Mediterranean kafkalithres have edible leaves. In Italy they are used as a spice. In an analysis of the composition of the essential oil of the above-ground cauliflower parts from Italy, sixty-seven compounds were identified that represented 96.5% of the oil. The most abundant compounds were (E) -b-ochimene (17.3), α-humulene (11.4%) and octyl octanoate (8.8%). Essential oil from above-ground parts of the T of Apoulos from Greece has been reported to contain α-humulene (28.7%) and an octyl hexanoate (11.7%) as the main ingredients.
